Dietetics

Food and Nutrition programs were developed in 1969. In 1972, the Dietetics major was approved and in 1974, Food and Business was developed as an interdisciplinary program.  In 1998, the Food and Business program was revised and is now called Food Service and Restaurant Administration. Courses were renamed to reflect the broader mission.  Course content is revised on a continuing basis to keep current with the changing demands of the foodservice industry. Click here if you would like to review the Handbook for Dietetics and Foodservice Majors.  The Dietetics program has been revised numerous times since its inception in order that the current requirements of The American Dietetic Association (ADA) are met or exceeded. The program is approved by ADA to offer a didactic program in dietetics (DPD). In 1997, the New York State Education Department (SED) approved Oneonta's program as a licensure-qualifying baccalaureate program. This means that graduates of the Dietetics program have met the SED educational criteria for the Certified Dietitian Nutritionist (CDN) credential upon graduation. Applicants for the CDN credential must complete SED's additional requirements for experience and examination and submit the required fee.  The Department has recently been granted Developmental Accrediatation by the ADA to offer a GRADUATE DIETETIC INTERNSHIP starting in 2001.  Click here for more information about the GRADUATE DIETETIC INTERNSHIP.

Dietetics majors take courses that include chemistry, biology, social science, behavioral science, food science, and nutrition. Graduates may apply for an ADA-accredited post baccalaureate experience which is required to become a registered dietitian (RD). Our alumni have received ADA experiences and graduate school appointments from prestigious institutions throughout the United States. Employment opportunities for dietitian are diverse, challenging and abundant. Positions are available in hospitals/nursing units, outpatient clinics, public relations/media, community/private practice, education, research, food service management (hospitals, nursing homes, day care, school lunch, resorts, business and industry), nutritional analysis, product development, food manufacturing/processing, marketing and promotion. Persons who have an aptitude for sciences, who derive satisfaction from being part of the health care or food service management team, and who enjoy working with and counseling people, will find a career in Nutrition and Dietetics most rewarding. Nutrition is defined as the relationship between humans and their food with psychological, social, economic and cultural, as well as physiological and biochemical implications. It includes the study of nutrients in foods as they relate to health and disease throughout the life cycle. Management of individual, family and group feeding situations is a key consideration. Dietetics is a science that deals with people, food, and health.

Food Service and Restaurant Administration majors have numerous employment opportunities in the rapidly growing field of Foodservice management.  Careers include restaurant management, hotel operations, the resort and cruise ship industries, institutional foodservice, sales, purchasing, corporate management, etc.  Our program provides opportunities to develop leadership potential and professional/technical depth--two keys to success in food service fields.

Majors complete courses in food science, food service management, business, nutrition and liberal arts. There is also a 600 hour work experience/internship degree requirement.  Students have met this requirement through internships with exciting companies like Walt Disney World, Red Lobster, Chicago Brewery and Restaurant, Resorts, Recreation & Travel Management, Sodexho/Marriott Corporation, and more.
